Peach Lemonade Popsicles
This summer, if you bumped into me at the grocery store, you’d probably find me in the freezer section reading the ingredients label on every single box of popsicles.
I even got my husband into it!
Seriously, I’ve been to all the supermarkets and natural health food stores in town and I have not been able to find even one box of popsicles that did not contain corn syrup or agave syrup. Never mind all the ones that are loaded with food coloring and artificial flavors.
I just don’t want my kids eating that stuff!
We were left with no choice but to make our own. But what fun we’ve had trying recipes and coming up with our own!
Somewhere in our experimenting we came up with some sweet yet tart peach lemonade popsicles! So this recipe kind of happened by accident but for us it was a good thing!
To make these popsicles you’ll need 3 cups of water, honey or liquid stevia to taste, 1/2 cup lemon juice, and one package of peaches (or strawberries or any other fruit you prefer).
Add all of your ingredients into your blender.
I was lucky enough to receive a Vitamix blender as a gift from someone special for Christmas last year. It has been one of the very best and most used gifts I’ve ever received!
If you don’t have a Vitamix blender you’ll have to put it on your wish list!
It blends up anything as if it were butter. Frozen fruit that used to take hours to blend, now takes seconds! It’s a super powerful blender and really easy to clean too. We use ours almost everyday!
Once you have all of your ingredients together, pop on the lid, and blend, blend, blend!
Now, your blender should not look like the picture below. It should not be this full. I decided to make a double batch. That’s why my blender is filled to the rim.
From experience, I can tell you… Even if it looks like your blender can hold it all, do. not. double. the. recipe. If you do, I guarantee you, bad things are about to happen.
Or in my son’s terms, very exciting things are about to happen!
Yup, this is what mama did in the kitchen today. I totally forgot that when you blend these ingredients together, for some reason, it makes tons and tons of foam.
If you don’t have room for the foam in your blender, it will overflow onto your counter, floor, and cupboards.
I thought you all would like to have an honest glimpse at the behind the scenes around here. However, I probably should’ve started immediately cleaning up the mess instead of snapping a couple pictures.
My peach lemonade mixture not only overflowed onto the floor but also seeped underneath the cupboards.
When a colony of ants moves in, it wasn’t my fault!
If your blender creates as much foam as mine does with these ingredients, get a kiddo to eat the foam up for you or let the mixture sit out until the foam dissipates.
If you’re using honey in your recipe, be sure to stir the mixture before you fill your popsicle molds. The honey tends to settle at the bottom.
The spout on my vitamix fits the mouth of these popsicle molds perfectly! They’re so easy to fill straight from my blender without any spills.
When filling your molds, leave about an inch from the top so that you can pop the lid on without any overflow.
Once all of your molds are filled, simply pop them into the freezer! You can stand your popsicles up in a sturdy cup and put them into the freezer or I just propped them up a bit on some frozen veggies.
Our popsicles took about six hours to freeze.
The kids were happily eating them as soon as they were ready!
- 3 cups water
- 1/2 cup lemon juice or freshly squeezed lemons
- 1/3 cup honey or 1 1/4 tsp. Stevia liquid concentrate
- 10 oz. pkg. frozen peaches or fruit of your choice
- In a blender, combine all ingredients on high until combined. Pour mixture into popsicle molds leaving about an inch from the top. Place popsicles into freezer and freeze for about six or more hours. Enjoy!
Now for the giveaway!
Before we bought the Mighty Pops we used paper cups and spoons to make popsicles. These are way better! I purchased these about a month ago and we enjoyed them so much that I contacted the maker of these molds to see if they would host a giveaway for me and they said yes!
The very best thing about these popsicles in my opinion is that they don’t spill and they don’t drip. The kids can walk around with them without wet dripping popsicle running all over the place. They are easy to fill and easy to clean (dishwasher safe!).
I also love that they have lids. We’ve popped them back in the freezer when the kids didn’t finish them.
These silicone popsicle molds are BPA free too!
The giveaway is for one set of 6 Ice Pop Maker Molds! Enter below! The winner will be announced Saturday, August 17th. Good luck!
