I tend to use eggs sparingly.
Eggs and I haven’t always been best friends but now that I can tolerate them, I don’t want to overdo it.
Mashed banana, applesauce, and Ener-G have always been my go-to for egg replacements.
Until now…
I recently discovered a wonderful new egg replacer.
Chia Seeds.
Chia seeds work as a great egg substitute because they are so good for you! They are full of omega 3 fatty acids, fiber, protein, calcium, and antioxidants. Can you ask for a better egg substitute? I think not!
When you’re trying to limit fruit intake, mashed banana and applesauce are not good egg replacer options. And when I was on the GAPS diet the Ener G egg replacer wasn’t GAPS legal.
So I’m excited about this chia seed egg replacer which is full GAPS diet legal and won’t add more fruit to your diet.
Plus, it’s super easy to whip up.
To make your own chia seed egg replacer you’ll need:
- White Chia Seeds
- Coffee Grinder/Blender
- Water
I love my Krups coffee grinder. I can’t remember why I bought it in the first place but I’ve never used it for grinding coffee. Go figure. It is easy to clean and it grinds things up in a jiffy. Love it.
To replace one egg called for in a recipe, add 1 tablespoon of white chia seeds to your grinder.

Pulse your grinder until the chia seeds have formed a nice fine powder.
This only took about a minute or less in my grinder.
Pour your ground chia meal into a bowl.
Add 3 tablespoons of water to your chia seed meal and let it set for a few minutes until it forms a nice gooey gel.
This only took a couple of minutes for me.
And you’re done!
You’ve got a great healthy egg substitute for any recipe.
This reminds me of when my dad got me a Chia Pet for my birthday one year. Craziest funniest gift ever!

Who knew I’d be making egg replacer out of the seeds years later…
- 1 tablespoon white chia seeds
- 3 tablespoons water
- Grind 1 tablespoon of chia seeds into a fine powder in a coffee grinder or blender. Pour the chia seed powder into a bowl and add 3 tablespoons of water. Let it set for a few minutes until the mixture forms a gel.
